Wet Tarkhineh has antibacterial effects. In Kurdish regions, Tarkhineh is used as a traditional medicine for treatment of patients with symptoms of upper respiratory tract infections. The present study aimed to identify the flora of traditional and industrial Tarkhineh to determine its capacity as a traditional healthy food with probiotic potential. Methods: In this research, dried, wet, and industrial samples were examined regarding total microbial flora, pH, and moisture content. Then, various species of Lactic Acid Bacteria (LAB) were isolated in order to determine their biochemical and morphological features. Results: According to the results, wet Tarkhineh had the maximum amount of LAB, including L.nagelii (67%), L.bifermentans (21.3%), Leu.cermoris (6%), L.fructosus (1.45%), L.fermentum (1%), L.intestinalis (0.9%), L.agilis (0.9%), and L.acidipiscis(0.9%). In addition, approximately 1% of the isolated samples remained unknown. Moreover, the industrially dried samples contained L.plantarum, while the sun-dried samples showed no LAB. Conclusions: Considering the high amount of LAB in wet Tarkhineh, the authorities are recommended to improve its production process. Overall, this food can be used as a beneficial dietary supplement.}, keywords = {Microorganism,Isolation,Identification,Lactic acid bacteria}, title_fa = {جداسازی و شناسایی لاکتیک اسید باکتری های ترخینه به عنوان فراورده‌ای سنتی با خاصیت دارویی علیه میکروارگانیسم‌های بیماری زا}, abstract_fa = {مقدمه: ترخینه یک غذای نیمه آماده و از محصولات تخمیری سنتی غرب ایران (کرمانشاه، ایلام، کردستان و لرستان) است. ترخینه­ی تر دارای اثرات ضد میکروبی نیز می­باشد و در مناطق کردنشین به عنوان داروی سنتی برای درمان بیماری­هایی با علایم عفونت­های مجاری فوقانی دستگاه تنفسی به کار می‌رود. هدف از این پژوهش شناسایی فلور میکروبی ترخینه‌ی سنتی و صنعتی جهت تعیین قابلیت این غذا به عنوان یک فراورده­ی سنتی سلامتی­زا با پتانسیل پروبیوتیکی می­باشد.مواد و روش: در این پژوهش، نمونه‌های ترخینه خشک، ترخینه تر و ترخینه صنعتی با توجه به روش‌های استاندارد از نظر کل جمعیت میکروبی، pH و میزان رطوبت بررسی شدند و سپس انواع گونه‌های لاکتیک اسید باکتری‌ها براساس خصوصیات بیوشیمیایی و مورفولوژیکی مورد جداسازی و شناسایی قرار گرفت.یافته‌ها: نتایج این پژوهش نشان داد که نمونه ترخینه تر دارای بیشترین مقدار لاکتیک اسید باکتری بود که شامل (67%)L.nagelii، (3/21%)L.bifermentans، (6%)Leu.cermoris، (45/1%)L.fructosus، (1%)L.fermentum، (9/0%)L.intestinalis، (9/0%)L.agilis و (45/0%)L.acidipiscis،  می­شد و 1% از ایزوله‌ها نیز ناشناخته باقی ماند. نمونه‌هایی که به روش صنعتی خشک شده بودند حاوی لاکتیک اسید باکتری از جنس و گونه‌ی L.plantarum بود، اما نمونه‌ ترخینه‌ای که به روش سنتی خشک شده است، فاقد لاکتیک اسید باکتری بود.بحث و نتیجه­گیری: با توجه به محتوای بالای لاکتیک اسید باکتری­ها در محصول سنتی ترخینه­ی تر، تولید صنعتی و بهینه سازی روند تولید آن پیشنهاد می­گردد و می­توان مصرف این ماده­ی غذایی را به عنوان یک مکمل غذایی فراسودمند توصیه کرد.}, keywords_fa = {میکروارگانیسم,جداسازی,شناسایی,لاکتیک اسید باکتری}, url = {https://smsj.sums.ac.ir/article_44030.html}, eprint = {https://smsj.sums.ac.ir/article_44030_53c6b73a2c6f8ef5a41402cc6039cf6c.pdf} }
